Horiatiki (Greek Salad)
5 tomatoes, cut into wedges
1/2 red onion, sliced
1 seedless cucumber, sliced
1 green pepper, seeded, deveined and chopped
6 ounces Feta cheese, crumbled
20 Kalamata olives
1/2 cup extra virgin olive oil
1/4 cup lemon juice
2 garlic cloves, minced
1 teaspoon dried oregano, crushed
Salt and pepper to taste
Grilled pita wedges
In a bowl, toss together the tomatoes, onion, cucumber, green pepper and feta cheese. In a bowl, whisk together the olive oil, lemon juice, garlic cloves, and oregano. Season with salt and pepper to taste; add this vinaigrette to the salad and toss well to combine. Serve this salad with grilled pita wedges. This salad serves 4.
